cocoa brownies


i have only made brownies from one recipe in my big long life, and it's the same recipe my mom uses and her mom uses... the bakers one bowl brownies. but i ran out of bakers chocolate squares the other day (an american ingredient) and had to find another way! i looked at dozens of recipes and thought this one would do the trick. these were really good and just as easy too. i made a mexican version for cinco de mayo with a pinch of cinnamon and cayenne, served up with praline ice cream (yum!). but i wanted to try out a purely chocolate batch this time. so good - big and dense and very chocolately. the bakers recipe will probably always remain my go-to since it's such a sweet part of my childhood, but this is a great alternative if you find yourself in another country - or just out of bakers squares :)

4 eggs
1 cup sugar
1 cup brown sugar
8 ounces butter, melted
2 tsp pure vanilla
1 cup cocoa powder
1/2 cup flour
1/2 tsp salt

preheat oven to 300.
in a large bowl, beat the eggs. add the sugar, butter + vanilla and beat again. add the dry ingredients and mix well with a wooden spoon until just combined. pour batter into an 8x8 baking dish (buttered or lined with parchment) and bake for 45 minutes. let cool, sprinkle with powdered sugar and cut into squares. serve with vanilla ice cream and share with a girl named ivy :)
