coconut cupcakes


for a few years now, this great recipe has kinda become our go-to for cupcakes. mom prefers to make them without coconut, as just a plain cupcake, which this recipe works really well for. but i love coconut- in the batter, in the icing, and piled high on top! we made some to include in ivy's birthday party dessert spread. they were perfectly delicious, and even resembled little birds' nests :) (to me, anyway.)


Barefoot Contessa's Coconut Cupcakes
w/ cream cheese frosting
for the cupcakes:
3 sticks unsalted butter, room temp
2 cups sugar
5 eggs, room temp
1 1/2 tsp vanilla
1 1/2 tsp almond
3 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
14 ounces sweetened shredded coconut

for the frosting:
1 pound cream cheese, room temp
3 sticks unsalted butter, room temp
1 tsp vanilla
1/2 tsp almond
1 1/2 pounds powdered sugar
for the cupcakes:
preheat to 325.
line a muffin tin with paper liners.
1. cream butter and sugar til fluffy, about 5 minutes.
2. add eggs, one at a time, scraping down the bowl after each addition. add vanilla and almond and mix well.
3. in a separate bowl, sift flour, baking powder, baking soda and salt.
4. in three parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. mix until just combined. fold in half of the coconut.
5. fill each liner to the top with batter, and bake for 25-35 minutes.
allow to cool in the pan for 15 minutes. remove to a rack and cool completely.
for the frosting:
cream together the cream cheese, butter, vanilla and almond. add the powdered sugar and mix until smooth.
* this recipe makes a TON. you'll have lots leftover, but it keeps well in the fridge for a long time. it's really good on brownies.

green burgers


we loooove these things. they have completely replaced regular cheeseburgers in our house. in fact, i've stopped buying beef altogether, and only get ground turkey or chicken because it is so much healthier. it was a joint decision, and we haven't missed it a bit - especially with this recipe.
here's what you'll need:
--ground turkey (i buy 93/7)
--pepperjack cheese
--hamburger buns, grilled with butter (i always get ours from the bakery section in the market)

now for the green stuff:
--salsa verde
--diced green chilies
--chopped cilantro
--green leaf lettuce
--tomatillos (or regular red tomatoes)
--sliced avocado

Directions:
Add some salsa verde (about 1/3 cup), 1/2 can diced green chilies and a handul of chopped cilantro to your ground meat. Season with salt and pepper. Grill hamburgers and buns (with melted cheese), pile on the green toppings, and serve with kettle cooked chips.

one year stats


ivy visited dr. fitch last monday morning (the best pediatrician in the world whom i will dearly miss) for her 1-year check up and i'm happy to report she is healthy as can be.

weight: 22 lbs (85%)
height: 31 in. (90-95%)

1 year updates:
--she started walking at 11.5 months
--now has 4 teeth, 2 top and 2 bottom
--needs to begin brushing twice daily. first dental visit: age 3.
--she has lots of hair for her age! but not quite pony tail length :)
--wears size 18 months, size 4 diapers
--has mostly switched over from formula to 2% milk (see above photo)
--learning to drink from a cup instead of the bottle
--sleeps wonderfully (still 12 hours)
--one long nap, usually 3 hours, although yesterday's was 4!
--has learned to wave hi and bye, although not always on cue
--has learned to kiss. soooo sweet.
--has also learned to shake her head "no" at me, when i'm shaking mine at her. so in other words, we're both telling each other "no". it's kinda funny/not what i'm trying to accomplish.
--eating more table foods, mainly fruits and veggies. favorites are still green beans, sweet potatoes, prunes, blueberries, lemons, cheerios, and ice.
--she is laughing a lot more which brings us such joy
--however, she is a little more sassy too. not sure if that is from age or being around her aunt gen who has taught her to say "woah!"

she is the biggest joy in my little life, even though sometimes our photo shoots now look like this:

kam is 27


we celebrated a day early with my family, and it'll be a week later with kevin's side. in between, on the actual day, we met up with craig at cpk (on our way to the ranch). i had the california club, he had the spinach artichoke, craig had margherita, and ives had 2 bowls of grapes.

{real} simple almond cake:
--box yellow cake mix, made according to directions
--add a little almond extract to the mix
--store bought frosting (or leftover homemade!)
--toasted almonds (375 for 10 minutes).
mmmmm.
